The Zselicvad Restaurant has been operating at the Kaposvár Universitys Wildlife Management Centre since spring 2012; it offers old-fashioned traditional quality in the 21st century. It is housed in a rustic building renovated to meet 20th century needs.
A main activity of the Wildlife Management Centre – besides game breeding – is the keeping of domesticated farm animals, which are raised with chemical-free feeds from the local Zselic area and are farmed in an extensive way. The largest part of the meat used to prepare our meals comes from their own high quality game and farm animals, and is prepared and produced by their own on-site processing plant.
The majority of their recipes and the compilation of their menus on our homepage are compliments of the award-winning master chef Kálmán Kocsonya Venesz; the prepared meals are a tribute to the conscientious work of the kitchen staff.
Their guests are presented with a choice of 10 to 12 different dishes, which reflect the seasons, holidays and programmes. One of their guests’ favorite dishes is the Bőszénfai game taster plate, which consists of venison salami, cured sausage and ham, and fresh vegetables. Another delicacy is the juniper infused venison tongue pie, served with baked beans and mushrooms, and a fresh salad with a balsamic-olive oil dressing.
One of their most popular soups is the tarragon game soup. Their hunters soup is made from game offal, incorporating venison meat and hearts, wild mushrooms and pickled cabbage.
Among their main courses are the highly-sought after red wine game stew with onion dumplings, and the gameburger, all of which come from their own kitchen. Their special game dishes include fallow-deer meat rolls, slices of wild boar roulade, crepes with spicy ragout, grilled venison chops with thyme and prunes in red wine, parmesan roasted vegetables, oven-baked potatoes, and wild duck breast confit on a rosehip sauce served with pears stewed in red wine and potatoes. The base of our rosehip sauce is their own home-made rosehip jam. We are also happy to promote slightly unusual ingredients such as grilled slices of donkey meat or slices of garlic buffalo meat.
Their pancakes are served with homemade strawberry jam, and the Angel Wing beignets are served with homemade peach jam.
The building can comfortably accommodate up to 50 people, and also houses two auditoria that can seat 20, or 80 people and which, besides conferences and professional meetings, offer the perfect venue for family celebrations; they both come with full technical equipment (projector, sound system, laptop and wifi). Their 20-seat terrace offers great views of our Wildlife Park.
